Roasted beets and orange salad is a simple, flavorful, colorful, refreshing and delicious meal.
- 2 medium size beets
- 2 red oranges
- 2 cups arugula
- 2 cups curly lettuce
- 4 tbsp Caesar dressing
- Prepare the orange slices. Trim both ends of the oranges. Slice oranges. Using a sharp knife remove the peel of every slice. Set the orange slices aside.
- Prepare the beets segments. Cut the cooked peeled beets into quarters and than in half each quarter.
- Assemble the salad. Layer arugula and curly salad on 2 plates, then arrange the beets and orange slices on top. Add the Caesar dressing, as desired. Lightly drizzle with orange juice and serve immediately. If desired, sprinkle with salt and pepper.

This salad is best served immediately after it's been assembled however you can enjoy it at room temperature or cold.
