Easy Oven roasted sliced potatoes with Italian herbs

Ingredients
  

  • 2 lbs gold potatoes medium
  • 2 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • ½ cup parmesan fine shredded
  • ½ teaspoon ground black pepper
  • 2 tablespoon unsalted butter

For serving

  • 1 teaspoon sea salt
  • ½ teaspoon fresh thyme
  • 1 tablespoon fresh parsley

Instructions
 

Preheat the Oven

  • Preheat your oven to 375°F (190°C) and grease the bottom and sides of a baking dish or cast iron pan with butter. Set it aside.

Slice the Potatoes

  • Using a mandoline or food processor, slice the potatoes very thinly (about ⅛ inch thick). This ensures they cook evenly and become crispy.

Soak the Slices

  • Place the sliced potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch. Drain and rinse the slices, then pat them dry with paper towels.

Mix the Ingredients

  • Transfer the sliced potatoes to a large bowl. Add olive oil, Parmesan cheese, minced garlic, Italian seasonings, salt, and pepper. Toss everything together until the potato slices are evenly coated.

Arrange the Potatoes

  • Layer the potato slices into stacks and arrange them vertically in the prepared baking dish or pan. This helps them crisp up and cook evenly.

Bake

  • Bake the potato slices uncovered for 50-60 minutes, or until the edges and tops are golden brown and crispy, while the centers are tender.

Garnish and Serve

  • Once baked, sprinkle with crispy bacon bits, sea salt, fresh thyme or fresh parsley if desired. Serve immediately and enjoy your perfect crispy oven-baked potato slices!

Notes

  • Select same medium size potatoes for a perfect result.
  • Use a mandoline to cut uniform thickness slices.
  • Soaking sliced potatoes in cold water for at least 30 minutes before baking can help remove excess starch, resulting in crisp exterior and creamy centers.
