Potato soup with sour cream and smoked sausages

Ingredients
  

  • 3 lbs potatoes peeled and cubed
  • 2 large onions chopped
  • 4 smoked sausages sliced
  • 1 medium carrot shredded or cubed
  • 2 medium tomatoes cubed
  • 2 tablespoon Oil
  • 1 teaspoon paprika
  • Salt
  • ground black pepper
  • 11/2 cup sour cream 3.5%
  • 1 teaspoon fresh lovage leaves chopped
  • Pickled hot peppers and their juice
  • water

Instructions
 

  • Peel and cube potatoes, chop onions, slice sausages, shred carrot, cube tomatoes.
  • Over medium heat add in a medium pot oil, onions and sausages.
  • When the onions begin to soften remove from the heat add paprika and mix.
  • Add water, shredded carrots, tomatoes, cubed potatoes and season with salt and pepper. Bring to a boil for 25-30 minutes or until potatoes are very tender.
  • In a bowl mix sour cream with some hot soup and pour over the soup from the pot. Mix well.
  • Add fresh lovage leaves at the end after the pot was removed from the heat.
  • Serve the soup hot with fresh bread, pickled hot peppers and their juice.
