Quinoa Mushroom Salad is an easy, wholesome recipe filled with fluffy quinoa, golden brown mushrooms, and fresh herbs. Whether served warm or cold, it’s a perfect light meal, vegetarian main, or healthy side dish that’s simple enough for busy weeknights but flavorful enough to impress.
In a medium saucepan, add rinsed quinoa, water (or broth), salt, and pepper. Bring to a boil, reduce to medium-low heat, cover, and simmer for about 15 minutes, or until fluffy and tender. Fluff with a fork and let it cool to room temperature.
