In a bowl, mix together chia seeds, coconut milk, vanilla and maple syrup.
Pour mixture into jars or glass containers.
Cover and refrigerate overnight or at least 4-5 hours.
Keep covered in the fridge for 4-5 days.
Before serving, stir once again to break up any clumps of chia seeds.
Serve chilled with desired toppings, such as fresh blueberries, strawberry, banana slices, clementine or coconut flakes.
Notes
If you don’t want to add the maple syrup as a sweetener, you can easily substitute with stevia or honey.Top chia seed pudding with desired toppings and enjoy!
