    Overnight chia seeds pudding recipe

    Overnight chia seeds pudding it is creamy and filling. It is an healthy treat, loaded with nutrients and packed with fiber and protein.

    This simple and delicious dairy-free overnight chia seed pudding uses all natural ingredients. It is naturally sweetened, vegan and gluten free.

    What is chia pudding?

    If you have never heard of chia pudding, it is simply chia seeds that have been soaked in a milk until they expand and become the texture of pudding.  No cooking needed!

    This chia pudding is simple, requiring just 4 basic ingredients that are totally versatile.

    It is suitable for breakfast, snack, or dessert!

    The flavor and toppings possibilities are endless. Drizzle honey or maple syrup on top or add fresh blueberries, strawberry, banana slices, clementine or coconut flakes.

    Chia seeds pudding with blueberries, banana, clementine and coconut flakes

    Servings 6 people (1 cup serving)

    Equipment

    • Mixing Bowl
    • Jars

    Ingredients
      

    • 1 cup chia seeds
    • 4 cups coconut milk
    • 1 teaspoon vanilla extract
    • 5 tablespoon maple syrup

    Instructions
     

    • In a bowl, mix together chia seeds, coconut milk, vanilla and maple syrup.
    • Pour mixture into jars or glass containers.
    • Cover and refrigerate overnight or at least 4-5 hours.
    • Keep covered in the fridge for 4-5 days.
    • Before serving, stir once again to break up any clumps of chia seeds.
    • Serve chilled with desired toppings, such as fresh blueberries, strawberry, banana slices, clementine or coconut flakes.

    Notes

    If you don’t want to add the maple syrup as a sweetener, you can easily substitute with stevia or honey.
