- This salad is perfect by itself, served as a healthy lunch. It also makes a great side dish for your favorite mains.
- You can roast, steam or boil the beats. Alternatively you can use store-bought pre-cooked beets to save time and effort.
- Use blood oranges for contrast.
- Use ripe and fresh ingredients preferably organic.
- Be careful because red beets stain very easily.
- You can prepare ahead the beets and slice oranges and store them in separate containers in the fridge.

Roasted Beets and Orange Salad with Caesar dressing
Equipment
Ingredients
- 2 medium size beets
- 2 red oranges
- 2 cups arugula
- 2 cups curly lettuce
- 4 tablespoon Caesar dressing
Instructions
- Prepare the orange slices. Trim both ends of the oranges. Slice oranges. Using a sharp knife remove the peel of every slice. Set the orange slices aside.
- Prepare the beets segments. Cut the cooked peeled beets into quarters and than in half each quarter.
- Assemble the salad. Layer arugula and curly salad on 2 plates, then arrange the beets and orange slices on top. Add the Caesar dressing, as desired. Lightly drizzle with orange juice and serve immediately. If desired, sprinkle with salt and pepper.
