- Chill: Transfer the mixture into a container, cover with plastic wrap, and let it chill in the fridge for about 30 minutes. This step helps the mixture firm up a little so it's easier to shape.
- Shape: Once chilled, roll the mixture into small bite-sized balls. For an extra touch, roll them in shredded coconut to coat.
- Store & Enjoy: Keep your energy bites in an airtight container in the fridge. They're good for up to a week, but I doubt they'll last that long!
Expert tips
- Not sticky mix? Add a bit more peanut butter, maple syrup, or honey to make the mixture stickier and easier to shape.
- Nut butter swap: If you're not a fan of peanut butter, no worries! You can use cashew butter, almond butter, sunflower seed butter, or even pumpkin seed butter instead.
- Coconut optional: Don't love coconut? Simply skip it and roll your bites in cocoa powder or crushed walnuts for a different flavor.

HEALTHY NO-BAKE ENERGY BITES

- 1 cup pitted dates
- ½ cup dark chocolate chips
- ½ cup shredded coconut
- 4 teaspoons cacao powder
- 1 teaspoon vanilla extract
- 6 tablespoon peanut butter
Instructions
- Stir ingredients together. Add all ingredients to a food processor and mix until combined.
- Chill. Move the mixture to a container, cover with plastic foil. Let chill in the fridge for 30 minutes until it will harden slightly.
- Shape. Shape them into small balls and roll them thru shredded coconut.
