Ingredients
  

  • 1 teaspoon oil
  • 1 onion medium, chopped
  • 2 carrots medium, sliced or 2 cups baby carrots (sliced)
  • 1 celery stick
  • 2 bell pepper small sweet
  • 3 liter beef broth or chicken, veggie broth, water
  • 1 cup peas frozen, fresh or canned
  • 500 grams tortellini beef
  • 2 tablespoon salt
  • ½ teaspoon ground black pepper
  • 2 tablespoon parsley optional
  • 1 tablespoon dill optional
  • 1 clove garlic chopped

Instructions
 

Step 1: Sauté the Vegetables

  • Heat the Pot: Start by heating a large pot or Dutch oven over medium heat with a splash of olive oil.
  • Cook the Veggies: Add the finely chopped yellow onion, diced carrots, celery, and minced garlic cloves. Sauté them for a few minutes until they’re tender and fragrant.

Step 2: Build the Soup Base

  • Add the Broth and Peppers: Pour in a mix of savory beef broth and chicken broth. Stir in the sliced bell peppers.
  • Season: Sprinkle in some salt and black pepper. Mix everything together to combine the flavors.

Step 3: Simmer

  • Bring to a Boil: Let the soup come to a boil.
  • Reduce Heat: Once boiling, lower the heat and let it simmer gently for about 10 minutes to let the flavors meld together.

Step 4: Cook the Tortellini and Peas

  • Add Tortellini: Stir in the cheese tortellini and cook for 5-7 minutes, or until they’re perfectly al dente.
  • Add Peas: Just before the tortellini is done, add the frozen peas. Cook for an additional 2-3 minutes until they’re heated through and bursting with sweetness.

Step 5: Serve

  • Ladle into Bowls: Carefully ladle the warm, creamy tortellini soup into your favorite bowls.
  • Garnish: For a finishing touch, you can sprinkle some fresh parsley and a bit of parmesan cheese on top if you like.

Notes
